Ham & Cheese Toasties
Golden, melty, and irresistibly crisp, these elevated ham and cheese toasties are the ultimate comfort food. The mix of Dijon mustard, kewpie mayo, and beetroot relish brings a tangy-sweet kick that cuts through the richness, perfect for a quick lunch or a crowd-pleasing snack.

Ingredients
8 slices ciabatta loaf
Butter, for spreading
4 tsp Dijon mustard
6 tsp mayonnaise (I like to use Kewpie)
2 tbsp beetroot relish
8 slices Swiss cheese
8 slices good-quality ham
14 slices pickled cucumber
Method
Preheat fan-forced oven to 210°C. Line oven trays with baking paper and set aside.
Generously butter the outside of each bread slice. Place 4 slices on the prepared trays, buttered side down.
Spread mustard, mayonnaise, and relish evenly over the bread slices.
Layer on a slice of cheese, ham, and pickles. Repeat the layers once more.
Top with the remaining bread slices, buttered side up.
Bake for 12–15 minutes, or until golden and crisp to your liking.
Allow toasties to rest for a few minutes before slicing with a serrated knife. Serve immediately.
Notes & Variations
Serve with extra pickles and crisps on the side.
If your oven has a steam function, adding low steam while baking will keep the insides soft and melty while ensuring a crispy finish on the outside.
